First up is breakfast - the most important meal of the day! I'm definitely the kind of person that wakes up hungry and looking forward to a good breakfast. I try to have a smoothie every morning, as it's a great way to get in a few servings of fruit, and they're just so yummy! My latest smoothie obsession has been banana and blueberry, which is super easy to make. I use about a 1/2 cup of Silk's Vanilla Almond Milk - I love the sweetness of the Vanilla variety in my smoothies! - 2 frozen bananas, and about 1/2 to 3/4 cup of frozen blueberries. I'll also add about a tablespoon of chia seeds and ground flax seed before blending, to add some extra nutrients and healthy fats. I know that some people don't like blueberries in their smoothies, because they do add a bit of texture (they don't blend down completely smooth), but I actually like this texture. Plus, the bananas add such a great creaminess that balances out the blueberries.
For lunch, I like to have something easy - leftovers, a sandwich, etc. For this lunch, I had some leftover small pasta shells - whenever I cook pasta I make enough so that I'll have leftovers for the next day! I topped my pasta with some tomato sauce, a bit of nutritional yeast (gotta get your B12!), and I shredded some of Daiya's new Medium Cheddar Style Farmhouse Block. These new Farmhouse Blocks are really, really great! I've also tried this Medium Cheddar flavour on it's own (om nom nom) and melted in a grilled cheeze sandwich. I found these blocks on sale at Rainbow Foods for $3.99 each and also picked up the Smoked Gouda flavour, which I haven't tried out yet, but I'm super excited about it! You can also buy shredded cheeze from Daiya, but I personally prefer the blocks.
For snacks, I like to eat a lot of fruit and veggies - apples, pears, baby carrots, bananas, clementines, kiwis, etc. I usually buy whatever fruit is on sale, buy really I don't know that there are too many fruits that I don't like. Between lunch and dinner I had a red delicious apple, some grapes, and a red pear - yum!

Dinner is the meal that I put the most time into, and I'm also cooking for my husband, Dylan. I get a lot of my dinner inspiration from Pinterest, and I've found quite a few amazing recipes over the past month or two that have become staples! Since the weather has been getting colder and colder, I've start craving soups a lot more. I absolutely love this recipe for Vegan Lemon Chickpea Orzo Soup from Delish Knowledge. My husband and I each had two big bowls of this soup - we pretty much keep eating until the pot is empty!

For dessert, I had a few of these Vegan Candy Cane Crinkle Cookies, which I made as a part of my Christmas baking! These definitely scream "CHRISTMAS!", and even though it's now January, I'm still loving them. I definitely have a sweet tooth, and these hit the spot perfectly. :)
Throughout the entire day, I'm also making sure that I always have a glass of water nearby. Water is my drink of choice - I don't do coffee or tea, and I've recently cut pops out of my life. So, aside from my smoothie in the morning, I'm usually just sipping on water - and maybe the occasional glass of Chocolate Almond Milk (omg, so good).
