What I Ate In A Day #6 - Vegan

Hello hello! I'm back with another What I Ate In A Day post, which I've been sharing with you every Tuesday (you can check out last weeks' post here)! I follow a vegan diet/lifestyle, so all of the foods that I'll be showing you today are meat, dairy, and egg free. As always, I drink a ton of water throughout the day!

Breakfast


My favourite breakfast of all time is a fruit smoothie - I always just have so much energy and feel so awake after getting in a few servings of fruit first thing in the morning! On this day I had a Lychee, Banana, and Raspberry Smoothie! I used about 3/4 cup of Lychee Juice, 2 frozen bananas, and about 3/4 cup of frozen raspberries. I also added in a tablespoon of chia seeds, and a tablespoon of ground flax seeds, and then blended it all up! This combination was super yummy, and it was actually my first time using lychee juice! Lunch

This lunch was super exciting, because I was trying out a new vegan product from Daiya! Daiya's Deluxe Cheddar Style Cheezy Mac is a vegan alternative to Kraft Dinner, which I was stoked to try out. There are actually three different flavours available, but I wanted to start out with the classic "cheddar" flavour. The noodles included in this box are gluten free, and I believe that it was my first time trying gluten free pasta. I was really impressed with how "normal" these noodles tasted!

The cheeze included isn't a weird powder like what you'd find in a box of KD. This is a packet of a gooey cheeze sauce, and as soon as I cut it open I knew it'd be delicious! Simply mix the cheeze sauce into the cooked pasta, and you're good to go! I'm a slight ketchup addict, so I did go ahead and add a bit of ketchup to my bowl, but it's definitely still incredible on its' own too.

The box says that this contains 3 servings, but I could have easily finished it off by myself. However, I ate about 2/3 of the box, and kept the rest for a snack the next day. These boxes are about $5-$6 CAD, so it's more of a treat than an everyday staple. I wish that you could buy the cheeze sauce packets are their own, since I already have a cupboard full of my favourite pastas.

Snack

I'm trying to get more veggies into my diet, and my favourite way to do that is with a big salad (or a veggie stir fry, I love those too!). For this salad, I filled my bowl up with iceberg lettuce, chopped carrots, cucumbers, red cabbage, and some tomatoes. I drizzled some balsamic dressing over top, and dug in!

Dinner

I've never considered myself a huge "soup person" in the past, but this past Fall and Winter I've really started embracing the soup life! I had some leftover spinach and cooked green lentils in my fridge that I had to use up, so a Spinach & Lentil Soup just made sense! I think I love soups so much because you can get really creative and add in almost anything! This soup included potatoes, carrots, green lentils, diced tomatoes, onion, garlic, veggie soup broth, spinach, and a dash of paprika. My husband actually said that it was one of the best soups that he's ever had! We both ate two huge bowls, and I still have enough leftovers for another meal.

Dessert 

No good day is complete without a yummy dessert, right? I absolutely love baking, it's been a passion of mine since I was a kid. When I first went vegan 8 years ago I was worried that it would be impossible to create yummy vegan baked goods, but that's totally not the case! One of my favourite recipes is for Vegan Chocolate Chip Cookies, and I've been perfecting this recipe for years and years. I like to think that these are the best Chocolate Chip Cookies out there, vegan or not! A batch of these doesn't last too long in our household, but I managed to snag the last two for my dessert. om nom nom!

  1. I've only tried the Alfredo Mac n cheeze from Daiya so far and it was amazing! That cookie looks super yummy too :)
