Breakfast
Lately I've been pretty obsessed with banana nice cream, which is simply just blended up frozen bananas! When you blend the frozen bananas, they turn into a super creamy ice cream-like consistency, so it feels like you're eating dessert, but really it's super healthy! For this breakfast I blended 3 large bananas, with a splash of vanilla, and topped everything off with some of Nature's Path Organic Love Crunch Dark Chocolate & Red Berries Granola. I found this granola on sale at Whole Foods, and I just had to try it out - and I'm sooo glad that I did! This stuff is just delicious, the berries and dark chocolate pair together so well, and it's vegan!
I also had an orange as a part of my breakfast, because they're just so delicious!
Lunch
For lunch I wanted to try out Gardein's Mandarin Orange Crispy Chick’n, and I decided to add a few pieces to a bowl of white rice and steamed green beans & edamame! These Mandarin Orange Crispy Chick’n bites were so delicious, and they're easily one of my favourite Gardein products that I've tried.
Snacks
As you should know by now, I love to snack on fruit & veggies throughout the day! On this day I had a granny smith apple with peanut butter, a pear, and some baby carrots with Catalina.
After my workout I tried out Vega's Protein & Greens Vanilla Protein Powder, which I mixed with soy milk. I really liked that this contains 2 servings of greens in every shake, along with 20 grams of protein! The vanilla flavour is really yummy, and this protein powder doesn't taste chalky like some other vegan protein powders I've tried. My husband also really liked this as well!
Dinner
I've had a taco craving for a while now, so I was super excited about this meal! I made these vegan tacos using Yves Veggie Mexican Veggie Ground Round, but you could also try making a lentil filling, which I'm definitely wanting to test out soon! I topped off my tacos with some shredded iceberg lettuce, mild salsa, and Daiya's Smoked Gouda Style Farmhouse Block, shredded, all in a warmed hard shell. You better believe that I went back for seconds!
Well there you have it! Another documented day of vegan eating! I hope you've gotten some food inspiration from this post, or at least some kind of idea of what a typical vegan eats in a normal day. Remember to check back next Tuesday for another What I Ate In A Day post!
Dessert
To end off my day, I had a bowl of vanilla pudding that I had made the night before! Some of Jell-O's instant pudding packets are actually vegan, so just make them with non-dairy milk and you're good to go! I like making my puddings with vanilla almond milk, but you could use any non-dairy milk that you like. The instructions say to use 2 cups of milk, but I find that you only need half of that when using non-dairy milks, because they do tend to have a thinner consistency.
