Breakfast
For breakfast I had a bowl of Raisin Bran cereal with Silk's Vanilla Almond Milk & diced fresh strawberries. I also had an orange, because they're just so delicious!
Lunch
I had made a big pot of udon soup the night before, so for lunch I turned to the fridge for leftovers! This was my first time making udon soup, but it was actually really easy. I just threw in any veggies that I had in the fridge, which this time included carrots, broccoli, bean sprouts, and nori (seaweed). The soup base was just veggie broth, soy sauce, & a splash of sesame oil, and then of course you need udon noodles! This really was delicious, and I can definitely see this recipe making it's way into my regular rotation!
Snacks
I saw a recipe on Pinterest for a veganized Wendy's Frosty, and I decided to give it a go! The recipe was pretty simple - almond milk, a banana, cocoa powder, chia seeds, and ice cubes. Unfortunately, I have to say that this was just okay - nothing special at all, and I don't think that I'll be making it again.
Dinner
Stir-fries are one of my go-to dinners, because they're so easy to whip together after work when you're just wanting something quick! For this stir fry I started out with a heap of white rice, and then cooked up some veggies - onion, garlic, carrots, corn, edamame, broccoli, water chestnuts, and some baked tofu. I then made some homemade peanut sauce, which I'm completely obsessed with! I definitely went back for seconds ;)
I was so full from dinner that I didn't end up having any dessert, which is pretty abnormal for me and my sweet tooth!

DeleteI'd love if you shared your peanut sauce recipe! I'm definitely wanting to make my own because it is so delicious. This looks like a great day of eating, I miss udon noodles I loved using them in stifries too when I was eating gluten!

Not that I know of but I just use rice noodles for pretty much everything that I could use udon for so I haven't looked too much, but they aren't the same! (But I love them with peanut sauce haha so I will look forward to your recipe!)
