Breakfast
For breakfast I made a Pineapple Banana Mango Kiwi Smoothie - yum!
Lunch
For lunch I started things off with a simple salad - romaine lettuce, carrots, & cucumbers topped with
Maison Orphée Caesar Vinaigrette which is a vegan Caesar salad dressing! Maison Orphée is a Canadian brand that I stumbled upon in my local health food shop, and I'm glad that I did! This dressing is creamy and tangy, and slightly resembles Italian dressing.
After my salad I made Daiya's Deluxe Alfredo Style Cheezy Mac, which was incredibly delicious! These "Mac 'n Cheezes" from Daiya are so easy to make, and will definitely remind you of the KD that you has as a kid.
Snack
Throughout the afternoon I had a few snacks. First, I had two kiwis and a nectarine. Then I dipped into a bit of my Easter treats that my in-laws sent to me! The Panda All Natural Raspberry Licorice contain no gelatin, and are made with real raspberry puree, and they're pretty yummy!
Dinner
For supper I made a vegan stir fry & spring rolls, which is one of my go-to meals. You can change up a stir fry so much, so you'll never get bored with them! I used red pepper, onions, carrots, water chestnuts, & baked tofu with a General Tao sauce, served over white rice. Yum!
Dessert
To end off my day, I indulged in a slice of Daiya's Chocolate Cheezecake! My husband doesn't normally eat too many sweets, but he's obsessed with this cake! I think that I prefer the strawberry cheezecake from Daiya, but both are delicious.
Yum!! That cake and the mac n cheeze looks so yummy!!
