What I Ate In A Day #9 - Vegan

Hello hello! I'm back with another What I Ate In A Day post, which I've been sharing with you every Tuesday (you can check out last weeks' post here)! I follow a vegan diet/lifestyle, so all of the foods that I'll be showing you today are meat, dairy, and egg free. As always, I drink a ton of water throughout the day!


For breakfast I made myself a smoothie bowl, which is just a thick smoothie poured into a bowl and topped with fresh or frozen fruit! For the smoothie base I blended up pineapple juice, lychee juice, 1 red pear, 2 bananas, grapes, and honeydew melon. Then I topped my bowl with kiwi, mango, blueberries, and chia seeds. I love smoothie bowls because they taste like a super yummy like a dessert, but they're 100% good for you! You can get super creative with your smoothie bowls, and it's almost impossible to make a combination that doesn't taste delicious!


Dylan actually made lunch for me, which doesn't happen to often! He's completely obsessed with trying out all of Gardein's products at the moment, and he recently discovered Gardein's Beefless Burger, which might just be my favourite veggie burger of all time! Seriously, it's soooo good! These come frozen in a pack of four, and you just have to heat them up (Dylan cooked them in a frying pan). He topped off the burger with some onion, lettuce, ketchup, Hellmann's vegan mayo, and some cucumbers. Does anyone else like cucumber on their burger?! I normally always add pickles, but we were out so cucumbers were our backup plan, and they were really good! Next time I want to try adding a slice of Chao cheese on my burger, I think that would be delicious! I also had a side of baby carrots, and two mini potatoes (i.e. all that Dylan was willing to part with from what he had cooked for himself!).

Throughout the afternoon I snacked on some fruit - orange slices, a Granny Smith apple & peanut butter, and a mango.

For dinner I went for an easy go-to meal - pasta! I started with fusilli pasta, added a healthy amount of garlicky tomato sauce, sliced up a Field Roast Italian Sausage, and shredded some of Daiya's  Smoked Gouda Style Farmhouse Block. This sausage is soooo good - Dylan's been eating them in buns or just simply dipped into mustard. The Italian flavour works super well in a pasta dish like this one, and I have to say that I prefer this flavour over Field Roasts Mexican Chipotle Sausage, which was just a bit too spicy for me. The new Daiya Farmhouse blocks are just incredible, and the Smoked Gouda flavour works well shredded over pasta, in a grilled cheese, on pizza, and on crackers!

For dessert I made some nice cream using 2 1/2 frozen bananas and 1 kiwi, blended up until the texture becomes super smooth & creamy. I then topped it off with half of a passion fruit, which is pretty much the best combination ever! I love nice cream because the texture really does mimic that of ice cream, except it's completely guilt free! I always keep a bunch of chopped up ripe bananas in my freezer to use in smoothies & nice cream :)

  1. Yum!! That burger looks delish! And nice cream is so good, I've never thought of topping it with passion fruit though! Great tip :)

    1. Passion fruit is sooo good on top of nice cream and smoothie bowls! I'm obsessed!
