What I Ate In A Day #18 - Vegan

Hello hello! I'm back with another What I Ate In A Day post, which I've been sharing with you every Tuesday (you can check out last weeks' post here)! I follow a vegan diet/lifestyle, so all of the foods that I'll be showing you today are meat, dairy, and egg free. As always, I drink a ton of water throughout the day!


I started off my day with a smoothie bowl, which is my favourite breakfast ever! This smoothie bowl started off with a strawberry kiwi smoothie base, and then I topped the bowl with more kiwis & strawberries, and some raspberries & chia seeds. So good!

Throughout the day I snack on some fruit - a banana, an orange, and a mango to be specific!

I decided to go really easy with this lunch, and just made a simple sandwich using vegan substitutes. I used white bread (I know, not the healthiest), some Yves Meatless Deli Bologna Slices, and one Field Roast Creamy Original Chao Slice. These Chao slices are seriously to die for - try them out ASAP if you haven't already!

Guys, this dinner is an exciting one! My husband had the genius idea of combining Doritos with tofu, and I had to run with it. After a quick Google search, I realized that this wasn't an entirely original idea, but it was still really fun to try out. Doritos Sweet Chili Heat are accidentally vegan, and they're one of our go-to snack foods! I will say that the flavour of the Doritos calmed down a bit during the baking process, which was good because I don't actually handle spice that well. I paired these tofu strips with some peaches & cream corn, jasmine rice, and carrots.

I made a pan of vegan date squares, and I'm absolutely obsessed! I used to make date squares with my grandma as a child, and I had a lot of fun veganizing my old recipe. These date squares turned out beautifully, and I'm going through the pan faster than I want to admit!
