Happy Tuesday friends! Yesterday was a holiday (Victoria Day), and I spent the long weekend at the cottage, which was exactly what I needed! The weather was perfect, and it was just nice to get out of the city and spend time with family. But enough about that, today I'm here to tell you all about What I Ate In A Day! This is the 21st installment of this weekly series (you can see last week's food diary here), and I'm really with the positive response that I've been getting from sharing my What I Ate posts! I'm vegan, so of course everything I'm sharing is free from any sort of animal products/by-products.
I started my day off with a smoothie! This smoothie included 1 banana, 1 mango, 2 kiwis, and 1 cup of strawberries, along with some orange juice and chia seeds.
For lunch I made a quick vegan Pad Thai, using rice noodles, carrots, bean sprouts, onion, Gardein Chick'n Strips, and some crushed peanuts on top. I just used a jar of Pad Thai sauce, but I'm definitely wanting to learn how to make Pad Thai sauce from scratch!
Throughout the afternoon I snack on some fruit - I chopped up a fresh pineapple, and I also had an apple.
Dylan and I were at a friends' for dinner, and they live within the Panago Pizza delivery area in Ottawa, so we went ahead and treated ourselves to a pizza! Dylan and I split a large, he had meatless pepperoni and olives on his half, and I had meatless pepperoni, pineapple, and onion on my half, complete with Daiya Cheese! I absolutely love Panago's crusts, they're fairly thick and chewy, which is just how I like my pizza. Also, they don't skimp on the Daiya!
After eating half of that large pizza, I had no room left for dessert! So that rounds out this weeks' edition of What I Ate In A Day, I hope you'll check back next Tuesday to check out another food diary. What foods have you been loving lately?
