Breakfast
I got a little fancy with my breakfast, and decided to make waffles! I topped off my cinnamon waffles with cookie butter (omg so good!), sliced bananas, coconut whipped cream, and of course maple syrup.
Lunch
I picked up a jar of Vegan Magic at Veg Fest last weekend, and I tried it out for the first time by frying up some perogies in it! Vegan Magic is essentially a bacon flavoured coconut oil that you can fry just about anything in. I just used frozen perogies that I bought at Whole Foods - it can be hard to find dairy and egg free perogies! Or, if you have the skills and time, you can make fresh perogies at home. I topped off my perogies with some pasta sauce and Daiya Cheddar Style Shreds - so good!
Snacks
Throughout the afternoon I snacks on some fresh blueberries and a White Chocolate Macadamia Nut Clif Bar!
Dinner
For supper I made a stir fry full of delicious veggies - carrots, onion, broccoli, edamame, water chestnut, corn, and red pepper. I also chopped up some baked spring rolls and added them into the stir fry, which I served with Jasmine rice.
Dessert
Did you know that Aero Dark is vegan?! I didn't even know that this chocolate bar existed until about a month ago when I saw someone mention it on Twitter. So yummy! I snacked on this chocolate bar while watching Chelsea Handler's new Netflix show - anyone else hooked on it too?
