What I Ate In A Day #28 - Vegan

Hello friends! I'm back today with another What I Ate In A Day post (you can see last week's food diary here). I'm vegan, so of course everything I'm sharing is free from any sort of animal products/by-products. Of course I drink a ton of water throughout the day - I try to get in at least 8 cups every day.

Breakfast

I started off my day with Daiya's Blueberry Greek Yogurt, which was absolutely delicious! The texture of this yogurt is really thick and creamy, and there were small blueberries mixed throughout. I also had a bagel with peanut butter (not pictured).

Lunch

For lunch my husband made something new, as he's been getting more creative in the kitchen lately. We had an udon stir fry made up of udon noodles, snap peas, carrots, mushrooms, onion, and red bell pepper. We also had baked tofu that had been marinated in jerk spices, so it was super hot & spicy!

Snacks

Throughout the afternoon I snacked on blueberries and a Coconut Chocolate Chip Clif Bar!

Dinner

For supper we made Gardein's Chick’n Scallopini with a melted slice of Daiya's Provolone, and a sprinkle of Vegan Magic's Parmageddon! On the side we had some boiled baby potatoes and Hellmann's vegan mayo as a dipping sauce.
