What I Ate In A Day #29 - Vegan

Hello friends! I'm back today with another What I Ate In A Day post (you can see last week's food diary here). I'm vegan, so of course everything I'm sharing is free from any sort of animal products/by-products. Of course I drink a ton of water throughout the day - I try to get in at least 8 cups every day.

Breakfast
I made a tall stack of Vegan Carob Blueberry Pancakes for breakfast! I got this recipe from Eat, Drink, and Be Vegan by Dreena Burton, and altered it a bit to make it a bit sweeter, as carob can sometimes have a slight bitter taste to it. It was my first time trying out this recipe, and I absolutely loved it!

Lunch

I had some leftover macaroni in the fridge, so I heated up a quick lunch of pasta & sauce with Gusta's Vegan Grating Block. Gusta just recently started popping up in Ottawa, and I'm always really excited to try out new vegan brands!

Snacks 

The last time I went grocery shopping I spotted Fig Newtons on sale and I just had to get them. I haven't had them in years, and I didn't realize that they were vegan! I used to eat these all the time as a kid, and the obsession has come back full force. I also had a pear, because you can't live off of cookies alone, unfortunately.

I finally found Gardein's Porkless Bites at Whole Foods, after seeing them all over social media for months! I cooked them up along with some carrots and onion, and served it over jasmine rice, and it was absolutely delicious! Gardein has been coming out with some incredible products this year, and this one is no obsession.

Dessert

I had such a strong craving for a milkshake, and I had some Almond Dream Vanilla Ice Cream left over. The chocolate version is one of my favourite vegan ice creams, but the vanilla just isn't good. It's not as creamy as the chocolate, so it's not great to eat on it's own - but it worked amazingly well in a milkshake! I blended up the almond ice cream, soy milk, some vanilla, and frozen strawberries. I topped it all off with a healthy serving of coconut whip, and I was in heaven!

So that rounds out another vegan food diary! It was a bit of a weird day food-wise, but I loved everything that I ate and drank nonetheless! I hope you'll check back next Tuesday to check out another food diary. What foods have you been loving lately?
