What I Ate In A Day #35 - Vegan

Hello friends! I'm back today with another What I Ate In A Day post (you can see last week's food diary here). I'm vegan, so of course everything I'm sharing is free from any sort of animal products/by-products. Of course I drink a ton of water throughout the day - I try to get in at least 8 cups every day. I'm actually flying to Japan today, but this food diary was from when I was still in Ottawa!

Breakfast

I was feeling adventurous, and I decided to test out my new donut pan! I baked up a batch of Chia Donuts (recipe from the Oh She Glows Cookbook), and drizzled them with some chocolate icing. Icing aside, these donuts are actually really healthy, and full of Omega-3 fatty acids, protein, fibre, and on top of all of that they're delicious too!

Lunch

My mother in law makes a delicious orzo salad, and I decided to put my own little twist on the recipe! I cooked up some orzo, which takes no time at all, and chopped up some veggies - carrots, onion, cucumber, red bell pepper. I also added in some corn and garlic, mixed everything together, and then drizzled on some balsamic vinaigrette. If I do say so myself, this recipe was pretty delicious, and it tastes even better as leftovers the next day!

Snacks 

My husband and I wanted to treat ourselves to some vegan ice cream while it was still Summery out! We went to Strawberry Blonde Bakery, which is a vegan, gluten free, and nut free bakery in Westboro. I got their Vegan Ice Cream Sandwich, with chocolate-vanilla swirl in between two chocolate chip cookies. It's been at least a decade since I had an ice cream sandwich, but it definitely won't be that long until my next one!

Dinner

My husband made chow mein for dinner, which was really yummy! He used egg-free chow mein noodles, onions, carrots, bean sprouts, red bell pepper, and Veggie Paradise Meatless Ginger Chili Infusion Strips. Yum!
