I woke up really craving pancakes, but I wanted to try out a recipe that I've never tried before. I decided on
Monday Morning Oatmeal Pancakes from How It All Vegan! by Tanya Barnard & Sarah Kramer. These pancakes were pretty easy to make, and they were completely different from any other panckaes that I've made before, because they were made with oat flour. This was a pretty healthy recipe, but I did find that there wasn't much flavour to it, so I did add banana slices and maple syrup before digging in.
Lunch
For lunch I made an Empowered Noodle Bowl with Orange-Maple Miso from Oh She Glows by Angela Liddon. This recipe is actually made with soba noodles, but all I had on hand was vermicelli, and that worked quite well with the rest of the recipe! The orange-maple miso sauce was absolutely delicious, and really easy to whip up.
Dinner
For supper my husband and I made Soul-Soothing African Peanut Stew from Oh She Glows by Angela Liddon. I've had this cookbook for a few years, and this recipe has always caught my attention, and I'm raelly not sure why it took me so long to try it out! This recipe is somewhere between a chunky soup and a stew, and it was absolutely delicious! The peanut flavour is strong, but it works surprisingly well with all of the other flavours.
Dessert
To finish off my day I had a High-Rise Pumpkin Cupcakes with Spiced Buttercream Frosting from Oh She Glows Every Day by Angela Liddon! If you can't tell already, I love Oh She Glows! I've never been huge into pumpkin spice, but this recipe looked so good in the cookbook that I just had to try it out. The recipe was easy and pretty foolproof, and OMG it's delicious! My husband also loves them - especially the vegan buttercream icing!
