Breakfast
Before going vegan, one of my go-to breakfasts was yogurt with fruit. I've tried a few vegan yogurts over the years, but this was my first time trying Yoso's Premium Cream Cultured Coconut Yogurt in the Chocolate flavour. I sliced up a spotty banana, mixed things up, and enjoyed every last drop! This coconut yogurt has a really thick and creamy texture, almost like pudding. While it doesn't make for the most attractive meal, it sure was delicious!
Lunch
My husband had seen a video from The Buddhist Vegan on Facebook for a vegan BLT, and he wanted to try it out. The recipe uses homemade tofu bacon, which was pretty easy to make. I'm not a huge fan of raw tomatoes, so I swapped those out for some cucumber slices instead.
Alongside my sandwich I had some Kettle Brand Roasted Garlic Potato Chips. I used to love sour cream & onion chips before I was vegan, and I've been told that these chips were a great vegan alternative. While I liked these chips, I don't think that they taste at all like sour cream & onion chips, so the search still continues!
Dinner
The weather has been cooling down significantly here in Ottawa, so I've been craving warm and hearty dinners. I had a craving for shepherd's pie, which is actually quite easy to veganize! I used Yves Veggie Ground Round with onion, garlic, corn, and carrots for the base, topped things off with mashed potatoes, and baked the casserole dish until the potatoes started to get crispy.
So that rounds out another vegan food diary! I hope you'll check back next Tuesday to check out another food diary. What foods have you been loving lately?
