What I Ate In A Day #42 - Vegan

Happy Tuesday! I'm back today with another What I Ate In A Day post (you can see last week's food diary here). I'm vegan, so of course everything I'm sharing is free from any sort of animal products/by-products. Of course I drink a ton of water throughout the day - I try to get in at least 8 cups every day.

Breakfast


One of my favourite breakfasts is scrambled tofu & fried potatoes. Tofu scramble is super easy to make, all you need is onion, garlic, medium or firm tofu, cumin, and turmeric. This time I also added in some Daiya shreds, which were delicious!

Lunch

Who doesn't love tacos?! I made these tacos with hard shells, Yves Veggie Mexican Ground Round, salsa, shredded lettuce, Tofutti Sour Cream, Daiya Mozzarella Style Shreds, and salsa. These were absolutely delicious, but I'm also curious to find a lentil taco recipe - so if you have a goo one, please send it my way!

Throughout the afternoon I snacked on a pear and an orange.

Dinner

I made a veggie stir fry for supper, consisting of carrots, edamame, smoked tofu, onion, jasmine rice, and a kung pao sauce.

I satisfied my sweet tooth with a Vegan Cookie Dough Cupcake from ThimbleCakes. Seriously, just look at that icing.
